Pizza Sauce

This recipe yields enough pizza sauce to generously cover all your pizzas. It's a versatile, balanced sauce, with baking soda and fresh ingredients to reduce the acidity of the tomatoes.

Instructions

  1. Prepare the Tomatoes:
    • If using whole canned tomatoes, crush them by hand or blend them lightly to your preferred consistency. If using crushed tomatoes, you can use them as they are.
  2. Cook the Sauce:
    • Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
    • Add the canned tomatoes and sprinkle the baking soda over the sauce. Stir well to combine (it will bubble up briefly).
  3. Simmer:
    • Add salt, honey, and continue to simmer the sauce over low heat for about 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
  4. Add Fresh Herbs and Seasoning:
    • Stir in the chopped fresh oregano and basil. Add black pepper and red pepper flakes (if using). Let the sauce simmer for another 5 minutes.
  5. Adjust and Cool:
    • Taste and adjust the seasoning if needed. Let the sauce cool before using it on your pizza.
