Pizza Sauce
This recipe yields enough pizza sauce to generously cover all your pizzas. It's a versatile, balanced sauce, with baking soda and fresh ingredients to reduce the acidity of the tomatoes.

Instructions
- Prepare the Tomatoes:
- If using whole canned tomatoes, crush them by hand or blend them lightly to your preferred consistency. If using crushed tomatoes, you can use them as they are.
- Cook the Sauce:
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the canned tomatoes and sprinkle the baking soda over the sauce. Stir well to combine (it will bubble up briefly).
- Simmer:
- Add salt, honey, and continue to simmer the sauce over low heat for about 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
- Add Fresh Herbs and Seasoning:
- Stir in the chopped fresh oregano and basil. Add black pepper and red pepper flakes (if using). Let the sauce simmer for another 5 minutes.
- Adjust and Cool:
- Taste and adjust the seasoning if needed. Let the sauce cool before using it on your pizza.
